Programma

We will take you on a tour of the chocolate making process starting at the cocoa trees, tasting the fresh cocoa fruit, fermenting, drying and roasting the beans, winnowing and stone grinding small batches of chocolate, You will learn how we turn cocoa beans into chocolate bars-step by step.
Other things to note
It is a good idea to wear long pants and socks for walking around the grounds. Sandals and flip flops are not recommended.

I am the founder of Mindo Chocolate Makers, the first small-batch chocolate maker in Mindo, Ecuador. Since 2009 I along with our guides have taught thousands of people from all over the world about how chocolate is made. We have two small-batch chocolate "factories" in Mindo, Ecuador and Dexter, Michigan. I have level 2 certification in chocolate tasting from the International Cocoa and Chocolate Institute, I am trained in cocoa bean grading from the FCCI Fine Chocolate and Cocoa Institute and a graduate of Ecole Chocolat. We will meet at El Quetzal de MIndo in Mindo, Ecuador. We start exactly on the hour. If you arrive late we will accommodate you and can join the tour at the top of the next hour. Last tour will be at 5:00 pm.

The tour was interesting, but I expected that they have their cocoa plantation in Mindo. I didn't know that Mindo is too high for cocoa plants. There were only a few trees to view. A pretty area, but not what I expected. In addition, our guide was in a hurry and drove us from one explanatory point to the next, because every hour starts a new tour. A bit more time, especially for our children, would be great.

Mindo is a very special place. The chocolate tour was my reason for going. The people and the environment are strong reasons to come back. Learning and tasting the different stages of chocolate flips your perspective and expands the appreciation of what makes chocolate so delectable. George and Jessi were fantastic!
